Designing for the cooking that will happen is more useful than designing for the photograph.

Where a household cooks with high heat and a lot of oil, an undersized extractor spreads the problem through the house. Sizing extraction and make-up air for real use is the least glamorous decision in the room and the one most often got wrong.
